The Past Few Weeks

     So it has been quite sometime since I last posted anything. It has been a really tough month for me. Almost 3 weeks ago I had a hysterectomy, which is something that I was not at all planning on going through. I had been having horrible abdominal pain and after my exploratory surgery had failed in relieving my pain, I resorted to having a hysterectomy. I never really planned on having more kids. I had thought about it but it never seemed to be in the cards for me. However, now that I don't have that option anymore I feel so sad about it. I can't say if I hadn't had my hysterectomy I would have more kids but at the same time at least there was always that option. My emotions since the surgery have been the worst part. I elected to keep one of my ovaries and just adjusting to the difference in hormone levels has been hard. I am elated and happy one minute and I am crying and screaming the next. It really is a roller coaster.
     As for weight watchers I missed 2 meetings one because there was a funeral at the church it was held and the second because of my surgery. But I was happy at my first weigh in back that I had lost almost 10 pounds. I am just short of 4 pounds away from my first 20 pounds lost. My goal for the week is to loose those 4 pounds. I just have to get back on track of eating right and walking if not anything else. Wish me luck and Happy Saint Patrick's Day to everyone.

A lighter Blueberry Muffins

So I lightened up some blueberry muffins and they turned out pretty good. Feel free to make this and let me know what you think. They are only 2 points for a good sized muffin.

Ingredients:

1 1/2 cups flour
3/4 cups Splenda
1/2 tsp salt
2 tsp baking powder
1/3 cup no sugar added applesauce
1/3 milk
1 egg
1 pint blueberries

Heat oven to 350 degrees
Spray a muffin pan or use paper muffin cups
Mix all ingredients well in a bowl
Scoop into muffin pan
Bake 15 - 20 minutes depending on how your oven cooks

The past weeks highs and lows

     So after weighing in last week I was exstatic to know that I had lost 7 pounds. This is a huge accomplishment for me. I was still glowing on Thursday when I started having abdominal pains. After going to the Emergency Room and having them run a cat scan, ultra sound, and x-ray. They couldn't figure out what was going on. So the next step was exploritory surgery. After the surger they iformend me they removed a growth that was on my intestine.
    This brings me to Tuesday this week. I go to weigh in not with high hopes since I was in the hospital the last week. I ened up gaining about 1 and 1/2 pounds. I was sad and dissapointed. But I also know that I couldn't do the things I had normally been doing.
Every week I (1) Write down everything I eat and the points they all are. (2) Try to get at least a 10 minute work out in a day. They main thing is journaling, writing what you eat. Everything down to those 2 M&M you ate.

Lightened up Banana Bread

Hello everyone,

I am a lover of sweet food. I think that is part of how I ended up weighing as much as I do. With my Weight Watcher's meeting being cancelled this past week due to the blizzard we had I have been bored out of my mind. So today I was really craving something sweet and my sugar free chocolate pudding wasn't going to cut it. So I came up with this lighted up banana bread. I make them in muffin tins that way they are already in an individual size. These are very yummy, they made the house smell amazing, and they are only 3 points per muffin.

1/2 cup Splinda
5 Tbsp of Brummel and Brown Butter
1 Egg
1 tsp Vanilla
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/4 skim milk
4 bananas smashed

*Preheat oven to 350
* Mix the butter and sugar together and add the egg.
* Add vanilla, milk, and smashed banana. Mix well.
* In a separate bowl mix together flour, baking powder, baking soda together
* Add to the banana mixture.
* Scoop into lined muffin tins
*Bake 10 - 15 minutes depending on oven variance.

Notes:

Mixture will be thick but the bananas make them so moist. Mine made 13 good sized muffins and only 3 points per muffin. I hope you enjoy them as much as I did.

Beef and Broccoli Recipe

I made Weight Watchers Beef and Broccoli for dinner last night and it was so good I thought I would share it with everyone. It was pretty easy and it is all made in one pan which is nice too. I hope you all enjoy it as much as we did.

 Serving size 1 1/4 cups.  5 points per serving.


Ingredients:

2 1/2 Tbsp Cornstarch, divided
1/4 tsp table salt (I used seasoning salt)
 3/4 pound lean beef trimed, thinly sliced
2 tsp canola oil
1 cup reduced-sodium chicken broth, divided
5 cups broccoli florets (or 1 12 oz bag of thawed broccoli)
1 Tbsp of fresh ginger minced
2 tsp minced garlic
1/4 tsp red pepper flakes, or to your taste
1/4 cup low-sodium soy sauce
1/2 cup water

Directions:

* On a plate combine 2 tablespoons of cornstarch and salt, toss beef in mixture to coat
* Heat oil in a nonstick skillet over medium-high heat
* Add beef and saute until cooked and brown about 4 minutes
* Transfer beef to a bowl with a slotted spoon
* Add a 1/2 cup broth to the pan and scrape the bottom of pan to pick up drippings
* Add broccoli and cover.
* Cook until tender crisp and add a few tbsp of water if needed (about 3 minutes)
* Uncover and add garlic, ginger, and red pepper
* Cook until fragrant (about 1 minute)
* In a cup stir together soy sauce, the rest of the broth, the rest of the cornstarch, and the water
* Pour into pan and reduce heat to medium-low and bring to a simmer
* Simmer until thickened
* Return beef and any juices to the pan
* Toss to coat and serve

School is finally underway

So I started school last week... lets say the first day didn't go nearly as good as I hoped it would. My first class is Math and I have always been a little bad at math. Well college math is no exception to my past math problems. My first day I had so much home and word problems that I was stressing. However, I have now completed all my homework, not that I totally understand what I was doing.

My second class Psychology. It was going great and loved the teacher, the people in the class, everything. Turns out I was in the wrong class the entire time. So besides wasting my time, I felt stupid, and was very concerned about what I missed in my actual psychology class. After talking with the registration people at the school I found out my schedule had somehow gotten changed with out my knowledge. I was furious. The next couple days went so much better then my first and besides the huge amount of homework I already have, I am pretty sure I am going to like my classes.

As for my weight loss update. As of Tuesday of last week I had lost another .8 of a pound. I was disappointed to say the least and my lack of much weight loss happened on my horrible day at school. I am praying and hoping that this week I will see a little more of a progress with the weight loss. I have changed so much about my eating, and what I cook with that it should be making some sort of difference.

A recipe for the day

    The other night I found a recipe on Weight Watcher's website and decided to try it. I love cooking, espeically baking, but that got me where I am today. Needing to loose weight. So after searching through recipe after recipe to find something that I would be willing to eat and that I had ingrediants to make.

Dijon-Roasted Potatoes: (4 points) makes 4 servings

Ingrediants:

2 tbsp dijon mustard
1 tsp olive oil
3/4 tsp paprika
1/2 tsp salt
1/4 tsp dried thyme
1/4 tsp pepper
1 1/4 pounds of potatoes cut in 1 inch cubes (I used new potatoes)

Preheat oven to 425*
Coat a cookie sheet with cooking spray
Mix all ingreadiants in a plastic ziplock bag
Coat potatoes well
Place on cookie sheet
Bake 20 minutes toss
Bake additional 20 minutes until cripy.


If you happen to have left overs:

1/2 c of potatoes
1 egg
Salsa

Reheat potatoes in a pan
Once heated through place on plate
Cook egg to your liking
Place on top of potatoes
Add salsa and enjoy.

     It is a nice use of leftovers and tasty at that.  Bonus recipe is 5 points.
