So it has been quite sometime since I last posted anything. It has been a really tough month for me. Almost 3 weeks ago I had a hysterectomy, which is something that I was not at all planning on going through. I had been having horrible abdominal pain and after my exploratory surgery had failed in relieving my pain, I resorted to having a hysterectomy. I never really planned on having more kids. I had thought about it but it never seemed to be in the cards for me. However, now that I don't have that option anymore I feel so sad about it. I can't say if I hadn't had my hysterectomy I would have more kids but at the same time at least there was always that option. My emotions since the surgery have been the worst part. I elected to keep one of my ovaries and just adjusting to the difference in hormone levels has been hard. I am elated and happy one minute and I am crying and screaming the next. It really is a roller coaster.
As for weight watchers I missed 2 meetings one because there was a funeral at the church it was held and the second because of my surgery. But I was happy at my first weigh in back that I had lost almost 10 pounds. I am just short of 4 pounds away from my first 20 pounds lost. My goal for the week is to loose those 4 pounds. I just have to get back on track of eating right and walking if not anything else. Wish me luck and Happy Saint Patrick's Day to everyone.

A lighter Blueberry Muffins
So I lightened up some blueberry muffins and they turned out pretty good. Feel free to make this and let me know what you think. They are only 2 points for a good sized muffin.
Ingredients:
1 1/2 cups flour
3/4 cups Splenda
1/2 tsp salt
2 tsp baking powder
1/3 cup no sugar added applesauce
1/3 milk
1 egg
1 pint blueberries
Heat oven to 350 degrees
Spray a muffin pan or use paper muffin cups
Mix all ingredients well in a bowl
Scoop into muffin pan
Bake 15 - 20 minutes depending on how your oven cooks
Enjoy

The past weeks highs and lows
So after weighing in last week I was exstatic to know that I had lost 7 pounds. This is a huge accomplishment for me. I was still glowing on Thursday when I started having abdominal pains. After going to the Emergency Room and having them run a cat scan, ultra sound, and x-ray. They couldn't figure out what was going on. So the next step was exploritory surgery. After the surger they iformend me they removed a growth that was on my intestine.
This brings me to Tuesday this week. I go to weigh in not with high hopes since I was in the hospital the last week. I ened up gaining about 1 and 1/2 pounds. I was sad and dissapointed. But I also know that I couldn't do the things I had normally been doing.
Every week I (1) Write down everything I eat and the points they all are. (2) Try to get at least a 10 minute work out in a day. They main thing is journaling, writing what you eat. Everything down to those 2 M&M you ate.

Lightened up Banana Bread
Hello everyone,
I am a lover of sweet food. I think that is part of how I ended up weighing as much as I do. With my Weight Watcher's meeting being cancelled this past week due to the blizzard we had I have been bored out of my mind. So today I was really craving something sweet and my sugar free chocolate pudding wasn't going to cut it. So I came up with this lighted up banana bread. I make them in muffin tins that way they are already in an individual size. These are very yummy, they made the house smell amazing, and they are only 3 points per muffin.
1/2 cup Splinda
5 Tbsp of Brummel and Brown Butter
1 Egg
1 tsp Vanilla
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/4 skim milk
4 bananas smashed
*Preheat oven to 350
* Mix the butter and sugar together and add the egg.
* Add vanilla, milk, and smashed banana. Mix well.
* In a separate bowl mix together flour, baking powder, baking soda together
* Add to the banana mixture.
* Scoop into lined muffin tins
*Bake 10 - 15 minutes depending on oven variance.
Notes:
Mixture will be thick but the bananas make them so moist. Mine made 13 good sized muffins and only 3 points per muffin. I hope you enjoy them as much as I did.

Beef and Broccoli Recipe
I made Weight Watchers Beef and Broccoli for dinner last night and it was so good I thought I would share it with everyone. It was pretty easy and it is all made in one pan which is nice too. I hope you all enjoy it as much as we did.
Serving size 1 1/4 cups. 5 points per serving.
Ingredients:
2 1/2 Tbsp Cornstarch, divided
1/4 tsp table salt (I used seasoning salt)
3/4 pound lean beef trimed, thinly sliced
2 tsp canola oil
1 cup reduced-sodium chicken broth, divided
5 cups broccoli florets (or 1 12 oz bag of thawed broccoli)
1 Tbsp of fresh ginger minced
2 tsp minced garlic
1/4 tsp red pepper flakes, or to your taste
1/4 cup low-sodium soy sauce
1/2 cup water
Directions:
* On a plate combine 2 tablespoons of cornstarch and salt, toss beef in mixture to coat
* Heat oil in a nonstick skillet over medium-high heat
* Add beef and saute until cooked and brown about 4 minutes
* Transfer beef to a bowl with a slotted spoon
* Add a 1/2 cup broth to the pan and scrape the bottom of pan to pick up drippings
* Add broccoli and cover.
* Cook until tender crisp and add a few tbsp of water if needed (about 3 minutes)
* Uncover and add garlic, ginger, and red pepper
* Cook until fragrant (about 1 minute)
* In a cup stir together soy sauce, the rest of the broth, the rest of the cornstarch, and the water
* Pour into pan and reduce heat to medium-low and bring to a simmer
* Simmer until thickened
* Return beef and any juices to the pan
* Toss to coat and serve

School is finally underway
So I started school last week... lets say the first day didn't go nearly as good as I hoped it would. My first class is Math and I have always been a little bad at math. Well college math is no exception to my past math problems. My first day I had so much home and word problems that I was stressing. However, I have now completed all my homework, not that I totally understand what I was doing.
My second class Psychology. It was going great and loved the teacher, the people in the class, everything. Turns out I was in the wrong class the entire time. So besides wasting my time, I felt stupid, and was very concerned about what I missed in my actual psychology class. After talking with the registration people at the school I found out my schedule had somehow gotten changed with out my knowledge. I was furious. The next couple days went so much better then my first and besides the huge amount of homework I already have, I am pretty sure I am going to like my classes.
As for my weight loss update. As of Tuesday of last week I had lost another .8 of a pound. I was disappointed to say the least and my lack of much weight loss happened on my horrible day at school. I am praying and hoping that this week I will see a little more of a progress with the weight loss. I have changed so much about my eating, and what I cook with that it should be making some sort of difference.

A recipe for the day
The other night I found a recipe on Weight Watcher's website and decided to try it. I love cooking, espeically baking, but that got me where I am today. Needing to loose weight. So after searching through recipe after recipe to find something that I would be willing to eat and that I had ingrediants to make.
Dijon-Roasted Potatoes: (4 points) makes 4 servings
Ingrediants:
2 tbsp dijon mustard
1 tsp olive oil
3/4 tsp paprika
1/2 tsp salt
1/4 tsp dried thyme
1/4 tsp pepper
1 1/4 pounds of potatoes cut in 1 inch cubes (I used new potatoes)
Preheat oven to 425*
Coat a cookie sheet with cooking spray
Mix all ingreadiants in a plastic ziplock bag
Coat potatoes well
Place on cookie sheet
Bake 20 minutes toss
Bake additional 20 minutes until cripy.
If you happen to have left overs:
1/2 c of potatoes
1 egg
Salsa
Reheat potatoes in a pan
Once heated through place on plate
Cook egg to your liking
Place on top of potatoes
Add salsa and enjoy.
It is a nice use of leftovers and tasty at that. Bonus recipe is 5 points.

First WW Meeting
Yesterday was my very first weigh in and weight watchers meeting and I have to say it went really well. I have already lost almost 4 pounds since Saturday. I was pretty excited for this alone and can't wait to go and weigh in next week. The lady that runs the meeting here in Gardner, the town I live in, is amazing. She has a good since of humor and she knows how to make us not feel so guilty. In her words, "its ok to cheat just make sure its worth it."
I am getting used to tracking everything I eat and it is definitely not as hard as I thought it was going to be. I am also getting used to cutting back my portions and eating more healthy choices. I have to say some things are really not that bad. All you have to do is be more aware of your food choices and be honest with yourself.
School is scheduled for me to start today. I have a class tonight and I am so excited to go. I am wanting to be a Juvenile Parole/Probation officer and my class to night is Juvenile Delinquency. However, I am pretty sure my classes is going to be cancelled and that my classes tomorrow are probably going to be cancelled as well. We are expecting quite a bit of snow tonight and lets just say I am not looking forward to that! Snow snow go away don't come again another day.

Day 3 of Weight Watchers
So I am on my third day of my new diet and I have to say it is going pretty good. I make sure I go to their website and log everything I eat and drink. Yesterday I ate 11 points less then I am allowed. I was pretty excited. Now if only I was exercising like I should be. I am pretty excited that tomorrow is my first weigh in and WW meeting. I am interested to see if I have lost anything yet. I am not going to get my hopes up but I secretly deep down want to have already lost some weight.
As for my other goals this year, school starts back on Wednesday. I am actually looking forward to it because I get to get out of the house. Being a stay at home mom kind of drives you crazy after a while. My whole life consits of talking to a 6 year old and a 1 year old. Its always nice to associate with other people at least close to my age, even though I am usually quite a bit older then most of my classmates. I guess that is what I get for wasting time and money earlier in my college career.

A step back to go forward
So after blogging last time about the Dr. Oz diet that I was sure was going to be my miracle diet I decided it wasn't for me. I am one of those people who can't do anything unless I have a real reason to do it. Trusting myself to work out and track what I eat, then weighing in on my own just didn't work for me. So I got a call yesterday from my mom who informed me that if I wanted to go back on weight watchers then she would pay for me to go back. This excited me because weight watchers was really the only diet that worked for me until I stopped going.
So I signed up again today and I have already started on my long journey to being healthy. I will have my weigh ins on Tuesday nights at the same time I attend the meetings. I am so excited to start this diet again and I already have my first long term goal. I want to be down about 30-50 pounds by April when my aunt comes to visit. I figured then she will go back home and tell my grandma how well I am doing and that she is proud of me. Then I am hoping by summer when I go to visit my grandparents I will be closer to 50-70 pounds down and looking really good. I know right now that sounds like a lot and that it is likely that the weight won't come off the way that I want it to. But I can have dreams right?

Diet Start UP
So yesterday was not a good day for me. There was a lot going on with our family and with me as well. Things didn't go quite as planned for my first day. I did however get signed up for Doctor Oz's 11 week diet make over. I watched his show the other day, which is something I don't normally do, and I was intrigued with what I saw. It is an all free diet and exercise program that will help you log your food, exercise, and your progress. The key word here for me was free. Like I said before I do not have a lot of money and anything that helps me and I can do for free is worth looking into. But I have signed in, answered all the questions they had, and put in my weight loss goals. I want to lose 130 pounds in 70 weeks. To be honest with you I hope to do it faster then that.
I don't have any exercise equipment really, besides a weight machine, and I don't have the money to join a gym. So what is my solution to the exercise part of my diet? I am going to test out my Wii Fit. I hope that it works or else I may have to figure out my finances and find some extra money for they gym. Like that is even a possibility.
So besides all the things going on in my personal life and having some current mild health problems I am set to begin loosing weight. I am looking forward to figuring out the balance that I am going to have to achieve with family life, school life, and my new healthy life.

Day 1 of the rest of my life
Sometimes I sit here and wonder why I am the person I am… was there any one point in my life that altered my life into the direction I am going. I used to be a happy girl who loved life and having fun. Now I am the girl who sits around and doubts myself. I am by no means a writer so those reading will have to bare with me and excuse my grammar mistakes.
Things in my life have gotten completely out of control. Our finances are in shambles to the point where we bounce checks every month. I have gained entirely to much weight and I am by no means proud of that. I have taken entirely to long to complete my Associates Degree in Criminal Justice.
I know self confidence starts with yourself. But the way I was raised and the way I have been treated by others over the past several years has really lowered mine. I get little comments about my weight like, "you need to lose weight and you need to eat better and exercise." As if that wasn't stating what I already knew. Those little comments that are made about my weight and my looks that frustrate me and only bring me farther down. I know what I look like, I am aware I need to lose weight and those people who keep making those comments only make things worse.
I get comments from my parents on why we can't pay certain bills or why we bounce checks. My mom likes to remind me that my husband and my father have the same job and get paid the same. So logically in her mind we shouldn't have any problems making ends meet. She fails to remember that she also has a full time job that contributes to their finances. Plus on top of us only having one job, we also have two children. Children cost money.
As for school I will make that a completely different days topic. My fears and high standards I set for myself are a topic all its own.
I struggle to call these resolutions, resolutions typically lead to failure. I call this my goals for the year. Goals are something you strive for, goals are something that when you reach them you feel accomplished and proud of your hard work. I am ready to feel proud of what I am doing and I am ready to start. First thing tomorrow morning I will start planning my next goal.
Goals:
* Lose 130 pounds
* Get Finances in order
* Start a savings account
* Pass all my classes with a B or better
* Write down everyday something to show my progress or how I feel
So I am going to make 2011 my life changing year. I am going to make my life better in every way I can. I am going to write my struggles, my fears, my failures, and my success down every day and my hope is that I can help someone else like me out. Heck maybe through this journey I will learn something about myself.
